Try i-to-i, I recently volunteered in Central America with them (house building in Costa Rica); they also do various projects in South America. I would definately go with them again
Where do you want to volunteer in South America? If you are thinking about going to Peru, I would really recommend Proyecto Peru Centre who offers different kind of projects in Cusco.

If you dont really need the support in England/ US from a commercial organisation, I wouldnt use I-to-I.
The charge commission on top of all the normal fees for food, etc that the ngo that runs the project charges.
If you go to the organisation directly, you get a much better price and the exact same project!
For Ecuador, check out , they offer projects from those ngo's for free in a database. Saves you lots of money at no charge.
If you want to check out some other volunteering opportunities, check out Yanapuma.org for some very interesting ones (does require a minimum time commitment).
