Cambodia or Laos are both nice destinations, it depends on your budget but accommodation and food there are not so expensive! i think you can do both it depends on the time that you have to be there. i know Cambodia better because i've been there, you can visit those beautiful sites: Angkor Wat and Angkor Thom are both sites you shouldn't miss if you are going, after i heard from some friends that Laos is also great! i will recommend you to try to do both even if it's for a short period of time. January is a good time to go there because it won't be so hot! around 30 °C!
for accommodation, i can recommend you some sites, http://www.asiahotels.com/ or http://hotel.twenga.co.uk/, they have good deals if you are on a short budget!

I hope you're having a good time so far. I've just handed in my notice at work yippie! I'm going to go round the world starting with New Year in Hong Kong and on to Vietnam on about the 5th of Jan then on to Cambodia and Thailand. Never been to Vietnam before but will have to see who I can meet in the hostels, If your about and at a loose end, let me know, I'm 37/M and flying out from London...
