What I would do in your situation is do Bangkok and Kanchanaburi on the way to Chiang Mai. I think you can do a 3 day trek and cooking course then fly down to whatever island you decide to go to and fly back up to Bangkok. No, you don't have a lot of time but if you're organized and you fly everywhere you should have the time to see everything and do all that you want.
I just don't think you have enough days for everything on your agenda. I am going to drop Kanchanburi. I think that makes more sense than a 1 day cooking class, a 1 day trek or fewer days at the beach.
Day 1:get a room, and a half day sightseeing.
Day 2 . I advise you to take the overnight bus up to Chiang Mai after sightseeing. You save a day and get in early am. Day 3-4, Day 5-6, Overnight bus back to BKK after trek. Arrive BKK early am. To the airport, fly to . Day 7-8-9 at the beach. I think is where you want to relax, swim, paddle. has a morning flight, but not a flight back to BKK to allows you to make your flight home. One solution is to take KBV-BKK. More expensive, but puts you into Suvarnabhumi in plenty of time for your flight home. I was looking at , but just could not work out flights, ferries, getting back to BKK w/o losing a beach day. There are beach options that are only a bus ride from BKK. or are only a few hours away via bus. Much cheaper to reach and less hassles to get there and return for your flight.
I would pack light. You need a bag legal for the overhead bin, wheels and can be used as a . You are going to be on/off planes, buses, ferries, taxis. Choose something easily carried. Good luck with your planning.

- bus or taxi from BK to shore forgot the town
- Boat to Island

- fast food 3 courese meal a. pork or chicken or shrimp b. rice c. stir fry veg $ 1.25
- Main Hotel Dinners under $ 10 the works w/ drinks
- Snorkeled right off the beach with coral and many colorful fish
- Beautiful sunsets
3. Chaing Mai -
You can do ( I did ) the following in one day !!!
Butterfly farm
Orchid Farm
Elephant Park show and ride
White Elepant Temples
Gem Factory -- super prices , good gems etc
Silk Factory -- see worms, cacoons, removal, spun, dyed, woven, made , sold
University Sponsored -- Dinner show $ 8.00 6 course meal -- 8 folk shows -
Music & Dance and Costumes - very authentic
4. Rachumburi
I loved it the old train through the rice fields.. mountains and rivers.
Widows slid down,, clickity clack rail cars...
Seriously I remember turning to friends and asking " Where's Bogie.
Food at the turnaround was tasty
5. Old Capitol Temples and Boat ride
take the bus up from BK ... catch the big cruise boat with Dinner on the way back
Really get to see life along the river... so fertile...
The Buddists are so wonderful..
