Easy question first. I would say 3 days are plenty of time to trudge around the rocks. 7 days are just overkill. You might go over to one day. Not covered with your Angkor Pass. A day out on the might be a better use of your time than another day at Angkor.

I stayed in a $6/night GH, so I will others give advice on hotels.

Yes, I would agree that 3 days exploring the temples is plenty and you can split those days up over the week. A day on the Tonle Sap is also a good experience as well as Banteay Srei.

If you’re really keen on the temples then an overnight trip to Kampong Thom to see the pre Angkorian sandstone temples of Sambor Prei Kuk is great start and gets you away from the crowds.

Also a overnight trip to Battambang is worthwhile and can break up the trip, experiencing the famous Bamboo Train and visiting Wat Banan.

In regards to hotels:
5* Hotel de La Paix - Top Notch (town centre)
4* Sojourn or Pavilion D'Orient - Totally relaxing (just outside of town)
3* Horizons Cambodia (A new boutique hotel near the town Centre)
(These are all good options but there are plenty of budget options around too.)
