Queensland sounds like it'd tick most of the boxes for you guys - they'll still be getting low summer temperatures (low 20's celcius approx.) and nice days at that time of year. Sydney will be a few degrees cooler, but clearly you've got things to do there so you'll just have to take their weather as it comes lol.
Ok, back to QLD - plenty of beaches for your surfing/boarding, the Gold Coast theme parks could amuse the boys for days, and the further north you go the warmer it'll get for you. The Gold Coast is actually a super-popular family holiday spot, and in June/Aug you'll get all the activities and attractions without the large crowds of summer. Road travel times between cities in Aussie can be looong, although still do-able, especially if you're able to share the driving. And of course theres plenty of smaller places along the way where you can stop and break up the trip, I was just mindful that you had said you prefer big cities.
You could fly into Brisbane (approx 1hr drive/shuttle service to the Gold Coast), or you could stay in Brisbane a couple of days then move down to the Gold Coast. Alternatively, you could fly further up the coast to some more Northern QLD spots like Cairns. As fans of the beach you'll love the coast of QLD in general

Dear Moe,
We did the same thing last year. Whilst Queensland is warmer for sure, Sydney's weather during winter can also be stunning. Particularly if you are in the Northern Beaches. We moved to Avalon, and ask anybody about it, Palm Beach, Whale Beach, Bilgola or any of the beaches around there and you won't hear a bad word.
We moved with 3 & 9 year old boys and as you say, they loved the surfing and bodyboarding. We put them in the Manly Surf School on Palm beach a real professional bunch of teachers and they now surf all year (well the 9 year old and me do). Everyone surfs all year round there... Thats Aussies culture. Growing up in that part of the world is amazing the kids spend more time outdoors than in front of a TV.
There's a light house to explore, lots of village living, great fishing, an amazing campsite called the Basin that is so safe... The list is endless.
