Darjeeling

I am planning a trip to India in March and wanted to go to Darjeeling. I was wondering how many days we should spend there and if it is easy to cross over into Nepal from there.

a week in Darjeeling is more than enough. You can not directly go to Nepal from Darjeelng. you need to take a shared jeep down to Siliguri and then take another one to kakarbhitta from where you can cross the border by foot or cycle ricksaw. At the other side of the border you will find a bus to Kathmandu (takes 13 hours).

Why don't you break the journey between Kakarbitta and Kathmandu in Dharan Bazaar (where you can take a rooftop busride into the mountains) or in Janakpur, a pilgrimage site?

Some part of the road between Kakarbhitta and Kathmandu had been washed away by the recent floods. Some of the tourists were stranded midway and faced lot of problem. But i hope it gets repaired by March, when u intend to visit Nepal.
I believe u should not spend more than 3 days in Darjeeling and spend rest of the time in Gangtok. U will require an inner line permit to visit Gangtok and its neighbouring areas. For more details refer to the page

Sikkim is very much in India, i think u meant 'friendly Indian people'

I know that Sikkim is nowadays, at least geographical, a part of India, but most of the people originate from Nepal, that's why...

I think stopping in Gangtok would be great. I think the permit is free and fairly easy to obtain. Would nepal be a waste if we didnt do a trek. I'm having trouble convincing my travel mate. I think i would still like to see it anway though...its still nepal!

Indeed, the inner line permit is for free and easily to obtain, this is in the bus station for buses to Gangtok in Siliguri. It only takes about ten minutes!

There's still a lot to see and to do in Nepal besides trekking. You can visit Chitwan National Park and the Kathmandu Valley is worth a few days.
I don't know why you don't go trekking, but if it's possible you can try the Helambu trek, this one starts just in the outskirts of Kathmandu and takes you in around 6-7 days through Sherpa country, and on the third or fourth day you already will have some views of snow capped mountains!
