depends, can you speak Spanish, or can your friends? if not, then book some things beforehand... if you can speak spanish then do most of the booking down there especially if your planning on being in big cities for a lot of it... there's a lot of tourist possibilities usually.

All the places you're going are well travelled by the backpacker crowd to they're well covered by decent guide books. They're not difficult to research so yes, I think a little pre-trip planning would be a great advantage to you. No reason to go over the top, but you should know the basics like currency exchange, etc.
Since you're new to travelling the biggest hint I can give you: There is NO need for a big backpack to hotel/hostel throughout Mexico, Central America and Cuba. Pack light, you'll have WAY more fun...

My spanish is veryyyyy basic but I am hoping to cram in some refreshers before I leave Oz so I can make the most out of using it when i'm in Central Am.

In Central America you can get very well along with English. And if in doubt, sign language is pretty well universal!
Don't plan too far ahead. Make a general travel plan of places to visit and work out the details from place to place. This way you get updated information on travel methods, accommodation, things to watch out for, etc.
Guide books have their usefulness but are at least 2 years old.
It's the journey that counts: finding out for yourself and experience to discover the unwritten.
