Does anyone know of a specific organisation that arranges for single travellers to meet at certain destinations?
Canada is a pretty safe place. I travelled there two years ago by myself. I hired a car in Victoria and drove around Vancouver Island. Canadians are very friendly as well so I wouldn't worry that much. Just plan everything in advance, where you are going to stay etc and transport.
Hostels are good places to meet people and Canadian crime rates are very low.
I too am planning to travel Canada in the autumn solo, maybe we could hang out at some destination.
Honestly, being nervous about travelling in Canada is like being nervous about going to kindergarten.

My advice is based on your method of transportation: Make many stops and take many breaks from the bus. Travelling across the country via Greyhound is very uncomfortable if it's done in one shot. In fact, I don't recommend being on a bus for more than 2 hours! Besides, they will most likely take you across the Queensway and will stop in many beautiful cities along the way. I recommend stopping in every city and seeing what it has to offer. Half the adventure is the discovery!
This will give you frequent breaks from the bus, lots to do and lots to see, and ample opportunities to meet really cool people.
From Ottawa going west, I'd plan my trip this way: Missisauga, Winnipeg, Regina, Saskatoon, Edmonton, Calgary, Nelson, Kelowna, Vancouver, Nanaimo.
Then on the way back, I'd go back to the places I liked most during that trip and revisit people.
Don't worry too much about traveling alone in Canada, it's a pretty safe county If you want to meet locals or other travellers I recommend couchsurfing. It's a great way to get to know a country better and you get a chance to make a new friend. If staying with a stranger isn't for you, you could also try a couchsurfing meet-up, where basically you go hang out with locals and other travellers.
