Not in the mood to dig it out, but I'd go to any of the little surf towns south of Manuel Antonio for a good time. Loads of travellers, small community, bohemian atmosphere....I would stay as far away as possible from San Jose. The area around Manuel Antonio has all you seek....and more.

The most beautiful beach in Costa Rica, and perhaps the most beautiful shell beach in the world, is Playa Flamingo, on the Pacific Coast. Stunning. But not many people there- not much of a party scene.
Along the Nicaraguan border, you can take an hour-long river cruise and see caymans (mini-alligators), monkeys, toucans, and lots of other animals.
Apart from the previous suggestions, you may want to look into spending your time in the Nicoya Peninsula (Malpais) or the Caribbean (Puerto Viejo de Limón is where the action is) or Dominical (South Pacific). In all three places you will find the activities you are looking for.
My best friend and I are doing the same trip and I was wondering where you decided you were going to spend New years? I heard that Malpais has a good beach party and we were thinking about heading that way. Do you have any other suggestions?

If I had never been to CR I would be a bit confused, what is your budget? Tours in CR can run to 75usd a day or more, and hostals and budget hotels in or near popular destinations are often full during holiday season, prices for lodging in CR, if hostels and bungalows are full are high, restaurant prices are high for Central America so I advise joining the hospex sites with hundreds of local tico ..costa rican members who will either meet up with you for a day or host you at their home, Google up Couch Surfing and BeWelcome.org
CR is not paradise and petty crime is endemic especially in bus terminals and crowded travel destinations, bring a chain for your pack or bag if riding the bus. Never accept drinks nor rides from strangers unless you are savvy street smart hitchiking dudes and princesses who do know self defense.
CR is a shangri la with 4 poorer neighbors to the north, there are many legal and illegal immigrants in CR doing dirty work the ticos wont do, very america like country.
