if I have understood correctly you'll stay one week in Holland and then you want to dedicate the remaining two weeks to Spain and France?
Oh, my I'd never could do such a quick trip! Two weeks are not even enough to know Paris... (:-)
But I understand that you can't stay any longer....
Let's be practical and short (because France is a big country and there are a LOT of fine places to visit), if you like mountains then N°1 is Chamonix - Mt Blanc, the highest mountain in Europe, and in my view the finest. If you lake seascapes and ancient medieval towns go straight on to Brittany (not far from Paris by train), Saint Malo would be my first choice, and if you have more time Vannes and the Gulf of Morbihan the second. If you are fond of ancient castles then Le Chateau de la Loire are a must - the best and finest castles in the world. La Loire is a region and there are several castles there. a search with google will tell you where to go and what to see.
