I am on the Big Island and don't know much about hotels on Maui. When you say "go to all 3" - do you mean to stay at these 3 different places? That would be too much moving around in one week. Suggest you find accomodation that fits your budget, and then stay there for the entire time you're on Maui and drive around to the various areas.
Hawaii in general can be very expensive, I agree you should pick one place stay there and drive around to the other places. But it also depends on your budget and how flexible you can be.
Waimea is the most expensive and naurally the most luxurious. However, is hardly the most "hawaiian" of spots. Expect to see large resort hotels and manicured golf courses. You may well wonder if you are in Hawaii or Del Mar, California (which this area resembles). Farther north is the old whaling town of Lahaina--a lot more Hawaiian, but like most towns on the island, it is a tourist town. Kannapali is another section of hotels, some large and some small--and also lots of condos.
On the east side of the island is Kahului, where the airport is--and basically just a large shopping mall area. Heading southeast from here you reach Pali--a small, really hawaiian town, but one that has almost no hotels or places to stay. From here it is 30 miles across super-lush beautiful terrain on a one-lane winding and at times, scary, road to Hana--the most hawaiian of all the towns--but extremely remote as I've said. In the middle of the island, on the south side are two residential towns called Pukalani and Makawao--these are on the road over the top of the mountain to the volcano beds. There are no hotels here that I'm aware of, but these would be nice places to stay if for no other reason than the great view (which is why I'm sure the locals live here).
I stayed in Waimea on my last trip--at the 5-star Grand Wailea with its long beach (one of the best), and six pools connected by winding rivers that cascade down a small man-made mountain. However, I should point out that my hotel was free because of all my frequent flier miles. I also took the time to visit the other places on the island--and was glad I did.
Based upon your comments, I'd spend part of my time in three different places if I were you. (1) Lahaina, (2) Pali, and (3) Hana. Maybe 4 days in Lahaina, 2 in Pali, and 3 in Hana. Note that you can see Pali in hours, not days--so the time spent there will also be spent driving over to the volcano--and taking trips up some lush canyons or at the nearby beaches (which are great there, since he windsurfing here is the best anywhere).

I am guessing you are going to name it yourself within some hours, maybe under a different name
