Just google "things to do in vancouver" you'll probably find alot more things than you have the time for.

Rent a bicycle and go around Stanley Park then on around False Creek to Granville Island-be sure to visit the

Take a ferry ride over to Victoria for the day,or take a tour on the Skybus around Vancouver or Seabus over to North Vancouver, Very large china town and although not what it once was Gastown is also a good place to shop for souvenirs and have a meal.
Commercial Drive. English Bay. Jericho Beach for great views of the city. Deep Cove and rent a canoe or kayak. Drive the Sea to Sky. Lighthouse Park.

Granville Island as mentioned before is a great place to check out and be sure to visit the market while you are there. It is a really cool place with lots to see and plenty of foods you will want to try. Stanley Park as already mentioned is a great choice as well. There is a Hop on Hop Off Tour you can do as well, information should be available at the hotel front desk with pickup times and such. Definately hire a car and do a trip up to the Rockies. Easy and spectacular.
