If you have the extra time, why not? However, go to either one, not trying to squeeze both in 3 days.
Geneva would be more convenient, since there are direct trains from Milan to Geneva, and from Geneva to Paris, with less travelling times too, in comparison to going to Interlaken. Since I've not been to either place, I can't evaluate them and give any further point of view about them.
