This is a fairly good list of buses/companies/destinations leaving from main bus station in istanbul:

According to this, there are two bus companies running to varna in bulgaria. Balchik is not too far from there.
Probably, the best would be to go to the bus station a day before and inquiry and buy ticket there.
You can also look around to see which is better, maybe you can even negotiate the indicated price 15% down, but maybe this won't work on international routes.

just to add one more thing:
as the main bus station is pretty massive, it's hard to navigate around. the list on the website will give you the number of platform - which is a big help once you're there.
Also I got this in am email from Backpackers Travel. Departure from main bus station of Istanbul at 09:00 am and 20:00 (two options) and the trip takes about 11 hours to Varna. The cost of the ticket is 35 Euro per seat and the cost includes all taxes and service charge. Please let me know about the number of passenger and the decision then I send you booking process of our company.

Not really, but thanks I guess. TTP doesn't have any listings on times or days, which is what I need and half of the info about the buses on his site are out dated and links don't work. I just need to know if there is like only 1 bus a week.. or if there are like 10 buses everyday - do they leave @ 1p, 5pm or 10pm Things like that. And there is nothing, really. I'm meeting my family (like mom and dad not weird extended cousins) in Balchick and they can more than likely pick me up in Varna ... I just need to tell them when, because I will have no way of calling them.
Try this company: Metro Turizm - they are very big in Turkey, also very good.

It seems it's 55TL (55euros), and leaves at 19:30 arrives 4:00am. Some other days, there is day bus too. But do check the specific date you need... Note: istanbul has several bus station. Locals will be able to guide to the one where you are leaving from.
