I know that there is a ferry from Saudi-Arabia to Hurghada, at least it runs during hajj time.

Information about transportation in KSA is hard to find, if there is any info online it will be in Arabic.
since it would take a relatively short time to drive through the sections of these countries it is frustrating that we'd have to apply for two visa's
I think it is impossible to drive that way.
You would not be allowed to enter Israel with a Saudi car and you are not allowed to enter Egypt with a car with Israeli licence plates.
The best way would be to go all the way to Aqaba and then take the ferry from Aqaba to Nuweiba. There are some issues with Israeli entry stamps that make it better if you do not enter Israel at all.
