Sorry for the lateness of this reply, I didn't notice your posting.

The questions about onward travel and visas is something I'm always nervous about touching. Rules seem to change frequently in the area, and so I'm always scared that what I say may not be true by the time you get here. What I can say is that I've flown into KL, and into Bangkok 3 times, as well as crossed land borders all over the region (between Malaysia and Thailand at least 5 times), and no one has ever asked me for proof of an onward ticket. However, technically they are supposed to and all it takes is one officer having a bad day to send you back home. So I would advise that you sort out your flights.
Double check this, but unless rules have changed for Malaysia, you don't need to get a visa before you arrive. You get 30 days entry on arrival, and all you have to do is cross the border and return and you'll get 30 days more. So if you leave Malaysia for a couple months and come back, you'll just get a new stamp. (someone please correct me if this has changed).

For budget, I think you have loads. It's way more than I usually spend when traveling as a couple. Even the last time I went to Thailand solo I didn't pay attention to budget hardly at all and only spent about 18 pounds/day. As a couple I don't think it's hard to keep that to more like 25-30/day which gives you plenty for a year. But I guess it depends on how you like to travel. I don't splurge too much and am fine with basic accommodations as long as it's clean and safe. When traveling in a couple I don't drink too much, and I don't shop hardly at all when traveling for an extended period. Plan Australia on a separate budget because it will be significantly more expensive.

As for the planning things - I always support just winging it. Who wants to follow around an itinerary? On a big trip like this I usually plan roughly were I want to be in month blocks just so I can co-ordinate with weather, visas, flights, and budgets. Then as I travel I think a week or so ahead.
